Description
Warres Vintage Port is the flagship bottling of the oldest of the British port houses, made only in the years a shipper chooses to declare.
Warre's was founded in 1670 and is the senior of the British firms in Oporto; it has been within the Symington family's group since the family's connection with the house began in the late nineteenth century. Vintage port is drawn from the finest parcels of a single harvest, traditionally trodden by foot in granite lagares, fortified with grape spirit part-way through fermentation so that natural sweetness remains, then aged for around two years in wood before bottling. It goes into bottle unfiltered, which is why it throws a substantial crust as it matures, and a declaration is made only a handful of times in any decade.
Stand the bottle upright for a day, then decant carefully off the sediment several hours ahead, serving at around 16 degrees with Stilton and walnuts or on its own after dinner.
