Weinbach Alsace Sylvaner 2023

Weinbach Alsace Sylvaner is made from old, biodynamically farmed vines in the Clos des Capucins, the walled vineyard that surrounds the domaine at Kaysersberg.

Sylvaner has slipped down the Alsatian pecking order in recent decades, kept in the shade by Riesling and the aromatic varieties, but it retains high natural acidity and rewards low yields and old wood. Domaine Weinbach farms the Clos des Capucins, established by Capuchin monks in the seventeenth century and worked biodynamically by the Faller family, and the Sylvaner comes from old vines on the sandy, rocky soils inside the clos, which are early-ripening and drain freely. The fruit was pressed gently as whole clusters, then fermented with indigenous yeasts in old oak vats, an approach the domaine believes adds depth and complexity without imposing oak flavour. The combination of vine age, low yields and that warm, well-drained site gives a restrained, taut white with savoury aromatics and real concentration behind the acidity.

Ready on release and good for five years or more. Serve at 10-12°C with charcuterie, onion tart or grilled white fish.
