Weingut Bernhard Ott Kabinott Riesling 2021

Weingut Bernhard Ott Kabinott Riesling is a dry Riesling from the Wagram, its name a play on the German wine term Kabinett and the family name.

The Ott family is based at Feuersbrunn in the Wagram, the loess covered ridge north of the Danube, and is best known above all for Grüner Veltliner. Riesling is the smaller part of the range and comes from the stonier parcels, where the variety finds the drainage and the cooler exposure it prefers; loess alone tends to suit it less well. The estate farms biodynamically, harvests by hand and ferments with indigenous yeasts. As with the Grüners, malolactic fermentation is avoided and the wine is bottled dry, with its natural acidity left intact rather than softened. Austria has bottled Riesling in this dry style for far longer than its German neighbours.

Serve well chilled at around 9 degrees with fresh seafood, sushi or lightly spiced dishes; it will hold in the cellar for several years.
