West Cape Howe Book Ends Cabernet Sauvignon 2021

West Cape Howe Book Ends Cabernet Sauvignon is a plush, full-bodied Great Southern Cabernet with classic cedar and blackcurrant character.

The winery takes its name from the rugged headland near Denmark on Western Australia's south coast, and today works from Mount Barker with vineyards in Mount Barker and Frankland River. The cool, maritime-influenced climate of the Great Southern gives Cabernet Sauvignon real definition, and this wine sits among the producer's premium releases, made from ripe fruit and matured in carefully selected oak. It is rich and textural, with blackcurrant, dark cherry, liquorice and cedar, hints of violets and tobacco, and an underlying red-earth savouriness. Fine acidity, soft tannins and a generous structure hold it all together.

Serve at around 16 to 18 degrees, ideally after half an hour in a decanter. It is a great partner for a rare scotch fillet, lamb rack with rosemary or a mature cheddar, and with a few years under its belt it is drinking well now while holding plenty in reserve.
