Description
Whistler Dry As A Bone is a pale, wild-fermented Barossa rosé made in the Provençal manner.
Rosé in this style is picked early specifically for the purpose and pressed straight away, which gives the pale colour and the completely dry finish the name promises. The fruit comes from the family's certified biodynamic Heysen Estate vineyards, and fermentation runs on wild yeast. The Pfeiffers have farmed this ground since 1982.
Serve at 9 degrees with salads, seafood or a summer lunch. Drink within two years of the vintage.
