Windows Estate Petit Lot Cabernet Sauvignon 2021

Windows Estate Petit Lot Cabernet Sauvignon is a Margaret River red from the property's oldest block.

A fractured laterite and ironstone ridge runs through the middle of this southern Margaret River property, rising out of the surrounding country on a north-south incline that drains hard. The oldest block sits on it, and 97 per cent of the blend is Cabernet with 3 per cent Petit Verdot. Chris Davies hand-picks and sorts, then crushes and destems before a ferment in small open-top vessels, plunged by hand and left to macerate well past the end of fermentation. A traditional basket press moves the wine to old French barriques for eighteen months, where the tannins settle without picking up new wood.

Blackcurrant, tobacco leaf and a stony, ferrous note, with tannins that are smooth and drawn out. Serve at 17-18 degrees. Roast lamb, a rare steak, or a plate of aged cheddar and quince paste. Give it half an hour of air first.
