Windows Estate Petit Lot Semillon 2021

Windows Estate Petit Lot Semillon is a single-block, organically grown white from Margaret River.

Chris Davies has bottled this variety on its own only twice in more than a decade, which tells you how particular the conditions need to be. The Home Block, planted in 1996 and managed organically, sits on an ironstone and laterite ridge with a north-south orientation and drains freely. Fruit was hand-picked at first light in clean conditions and fermented on wild yeast, then matured in a mix of oak and clay vessels. Clay keeps the wine taut while oak gives it a frame, and the high mineral content of the soil shows up plainly in the glass.

Slate and sun-bleached hay on the nose, then bright citrus, white flowers and an oyster-shell finish. The fine acid line suggests it will reward cellaring. Serve at 11 degrees with oysters, a lemony pasta, or grilled whiting.
