Wolfburn Batch 318 Single Malt Scotch Whisky

Wolfburn Batch 318 is a limited small-batch single malt Scotch whisky from the distillery's numbered series.

The numbered releases are how this Caithness distillery shows off individual cask parcels, and this was the sixth. It marries lightly peated spirit matured seven years in first-fill Oloroso sherry butts with spirit of the same age from first-fill bourbon barrels. Total production came to 4,800 bottles. The distillery sits at Thurso on Scotland's north coast, draws its water from the burn that gave it its name and has been operating since 2013, which makes a seven-year-old parcel relatively senior in its history. Nothing is chill filtered and no colour is added.

Rounded and generous, with dried fig, toasted oak and a thread of smoke running behind the sherry sweetness. Drink it neat at around 20 degrees, adding water a drop at a time. It suits an after-dinner pour beside dark chocolate or a hard cheese.
