Wolfburn Cask Strength Aged Seven Years Single Malt Scotch Whisky

Wolfburn Cask Strength Aged Seven Years is a natural cask strength single malt Scotch whisky.

Only 1,840 bottles were produced and a fraction of those reached Australia. The whisky is a shade over seven years old, matured across Oloroso sherry butts and ex-bourbon quarter casks, then bottled at its natural strength with no water added, which is the point: flavour, power and intensity left intact. Quarter casks accelerate maturation because of the surface-to-volume ratio, so seven years in this combination carries more weight than the age statement implies. The distillery is at Thurso in Caithness, on the far north coast of the Scottish mainland.

Concentrated and hot at full strength, with dried fruit, toffee and a peppery oak finish; a teaspoon of water pulls it apart nicely. Serve neat at room temperature in a tulip glass. Best on its own, or after a meal with something dark and bitter.
