Wolfburn From The Stills Summer Single Malt Whisky 2020

Wolfburn From The Stills Summer is a lightly peated seasonal single malt Scotch whisky.

This was the first of the seasonal bottlings made from lightly peated spirit, and by no means the last. The team went back to 2015 and pulled three of the oldest peated casks in the warehouse, a pair of quarter casks plus a fresh bourbon barrel, for the marriage. Quarter casks do a lot of work in a short time, which is why relatively young whisky from this distillery tastes older than it is. The distillery stands at Thurso in Caithness, the northernmost on the Scottish mainland, and takes its water from the burn that gave it its name.

Gentle smoke over honey and citrus, with a dry, slightly ashy finish. Neat, at room temperature, is how it shows best; a drop of water lifts the smoke. Try it with smoked almonds, oysters, or a piece of strong blue cheese.
