Wolfburn Morven Single Malt Scotch Whisky

Wolfburn Morven is a lightly peated single malt Scotch whisky.

The highest peak in Caithness is ringed by open moor and wetland where peat has been cut for hundreds of years, and it gives this malt its name. The original nineteenth-century distillery on this site was largely fired by peat, so a lightly peated bottling makes historical sense. Phenols sit at around 10ppm, enough to lay a thin wreath of smoke over the plump, rounded house spirit without burying it; for scale, Ardmore and Talisker land around 10 to 14ppm, Bowmore and Kilchoman between 20 and 25, and the big Islay malts between 35 and 55. Maturation ran about four years across Islay quarter casks and ex-bourbon casks.

Soft smoke over honey, pear and a saline edge, finishing dry and gently ashy. Drink it neat at room temperature with water on the side. It is a good match for smoked fish, or a bowl of mussels cooked with bacon.
