Wolfburn Silent Night Single Malt Scotch Whisky 2021

Wolfburn Silent Night is the distillery's 2021 Christmas edition single malt Scotch whisky.

The festive bottling is an annual limited run from this Caithness distillery, and the 2021 edition draws on spirit distilled in 2015. Part of it spent six years in bourbon barrels, the rest in first-fill Oloroso sherry hogsheads, and the two together give a rounder, sweeter shape than the standard range. Distilling only began here in 2013, so a six-year-old component was a meaningful release at the time. Bottling, as always, was without chill filtration or added colour.

Christmas cake, dried apricot and a little orange oil, with a warm, malty finish. Room temperature, neat, in a small glass. It is made for the end of a long dinner, beside pudding, nuts, or a wedge of Stilton.
