Description

Yabby Lake Single Vineyard Chardonnay is grown on the estate's sandy clay loam at Tuerong.

The Mornington Peninsula is surrounded by water on three sides, which keeps the season cool and long and gives Chardonnay acidity at full ripeness. The Kirby family planted here in 1998 and Tom Carson has made the wines since 2008, working the vineyard block by block. The wine is whole-bunch pressed, fermented with wild yeast in French oak and matured on lees.

Serve at 12 degrees with scallops, roast chicken or a gruyère tart. It develops over eight years.
