Description
Yalumba FSW Botrytis Viognier is a luscious dessert wine made from late-picked, botrytis-affected Viognier.
Few producers anywhere have worked with Viognier for as long as this Angaston winery, which planted the variety in 1980 and helped establish it in Australia. For this wine the grapes are left on the vine into autumn until noble rot, botrytis cinerea, shrivels the berries and concentrates their sugar and acidity. The juice is fermented slowly and stopped while plenty of natural sweetness remains, leaving a wine of around 10% alcohol with honeyed stone-fruit richness held in check by fresh acidity.
Serve well chilled in small glasses. Try it with a stone fruit tart, crème caramel or a creamy blue cheese. The half bottle is plenty for four to six people after dinner.
