Yalumba The Caley Cabernet & Shiraz 2018

Yalumba The Caley Cabernet & Shiraz is the family winery's flagship red, a cellar-worthy blend of Coonawarra Cabernet Sauvignon and Barossa Shiraz.

First made from the 2012 vintage, the wine is named after Fred Caley Smith, grandson of founder Samuel Smith, who travelled widely through the vineyards of the world in the 1890s and brought new ideas home to Angaston. The blend joins two of South Australia's great regions: Cabernet from the terra rossa soils of Coonawarra, with blackcurrant, dark cherry, leafy and iodine notes, and Barossa Shiraz, which adds succulence through the middle. Only selected parcels make the cut, and the wine is matured in fine oak. The 2018 is very deep and dense, with a layered structure and prominent yet silky tannins.

This is a wine for the cellar. It drinks well on release, but the producer suggests it will live for 15 years or more. If opening now, decant for an hour or two and serve at around 17 to 18 degrees with a rib of beef, roast venison or aged hard cheeses.
