Yalumba The Caley Cabernet & Shiraz Museum Release in magnum is a rare large-format bottling of the winery's flagship, released with a decade of age.

Held back in the Angaston cellars and released only once it had begun to mature, this 2015 is one of the earliest vintages of the wine, which takes its name from Fred Caley Smith, a grandson of the founder known for his travels among the world's vineyards. Coonawarra Cabernet Sauvignon provides the backbone, with cool green olive, leafiness and iodine, while Barossa Shiraz brings red currant, spice and richness. The magnum format slows ageing further, helping the wine hold its freshness. Expect a deep, dense red with a precise, balanced line of acid and tannin.

A magnum like this is made for a celebration. Stand it upright the day before, decant carefully off any sediment, and serve at around 17 to 18 degrees with slow-roasted lamb or a standing rib roast. It can be enjoyed now or cellared further.
