Yalumba The Caley Cabernet & Shiraz Museum Release 2015

Yalumba The Caley Cabernet & Shiraz Museum Release is a cellar-aged bottling of the winery's top red, released after extended rest at the winery.

A portion of each Caley vintage is set aside for later release, giving collectors a wine that has already developed in ideal conditions. The Caley honours Fred Caley Smith, who toured the wine regions of the world in the late nineteenth century. It unites Coonawarra Cabernet Sauvignon, with its fresh, refined leafiness and notes of green olive and iodine, and Barossa Shiraz, which contributes red currant, spice and weight. Fine oak maturation and long bottle age have brought the two together, leaving a wine of richness, precision and a long, balanced finish.

Decant before serving to separate the wine from any sediment and let it breathe. Serve at 17 to 18 degrees. It suits rare roast beef, lamb rack with herbs or a plate of aged Comté, and will still reward a few more years in the cellar.
