Yalumba The Caley Cabernet & Shiraz Museum Release 2016

Yalumba The Caley Cabernet & Shiraz Museum Release is a mature yet remarkably youthful release of the flagship blend, held back at the winery before sale.

The Caley sits at the top of the Angaston family's range, joining Coonawarra Cabernet Sauvignon and Barossa Shiraz in a style of Australian blend with a long history. Its name remembers Fred Caley Smith, grandson of Samuel Smith, whose interest in overseas vineyards shaped the company's outlook. This 2016 has spent years resting at the winery and is still fresh, with a brick-red rim. Cassis, wild oregano, green olive, liquorice and a hint of leather sit on a chiselled palate of red currant and dried herbs, and real tension carries it to long ironstone tannins.

Open it an hour ahead, decanting off any sediment, and serve at about 17 degrees. Beef Wellington, roast duck or a mushroom and truffle risotto would be ideal. It has the structure to go on for many years.
