Yalumba The Menzies Cabernet Sauvignon Museum Release is a bottle-aged Coonawarra Cabernet, held back at the winery until it began to show its full complexity.

Museum releases give drinkers the chance to try mature wine that has been stored in ideal conditions since bottling. Coonawarra Cabernet suits this well, since the region's cool climate and terra rossa over limestone give wines of firm structure and fresh acidity that age gracefully. After nearly a decade in bottle, this 2016 has taken on a brick-red hue and notes of cedar and leather alongside rich Christmas pudding fruit and the salty 'sea spray' note typical of the district. The palate opens with cedar, blackberry and mocha, and stays structured and generous, with plenty of life ahead.

Stand the bottle upright for a day, then decant gently and serve at around 17 degrees. Slow-roasted lamb shoulder, venison or a wedge of aged cheddar will complement its savoury development. Drink now or over the next several years.
