Yalumba The Octavius Shiraz 3L 2017

Yalumba The Octavius Shiraz 3L is a striking double-magnum bottling of the winery's small-barrel Shiraz.

Each release is matured in octaves, compact casks built by hand at the on-site cooperage, and the high ratio of oak to wine gives the finished Shiraz its polish and structure. Grapes come from across the Barossa, including the cooler, higher Eden Valley, blending richness with perfume. 2017 was a cool, late season in South Australia, and it gave this wine a spicy perfume of red cherry florals, blueberry, blackberry and dark plum, entwined with cocoa and savoury notes. The palate is concentrated and textural, built on currants and blue and black fruits with long, refined tannins.

A bottle this size is best opened for a big celebration. Stand it upright for a day or two, decant in stages, and serve at around 17 degrees with a spit-roasted lamb or a whole beef fillet. Large formats age slowly, so there is no rush.
