Yalumba The Octavius Shiraz Museum Release 2016

Yalumba The Octavius Shiraz Museum Release is a cellar-aged bottling of the octave-matured Barossa Shiraz, released with extra years of bottle age.

Cellared at the winery in ideal conditions, this 2016 has had time for the oak from its small octave casks to integrate fully with the fruit. Those casks are made in the company's own cooperage, a rare feature among Australian wineries, and their small size gives an intense oak influence when the wine is young. The Shiraz is drawn from the Barossa Valley for depth and Eden Valley for aromatic freshness. The result is very deep purple-red, with dark cherry, anise and red raspberry, and a rich, compote-like palate that stays balanced, elegant and refined.

Decant gently off any sediment and serve at about 17 degrees. It is a special match for beef Wellington, venison loin or a mature cheddar, and there is life in it yet.
