Description

Yannick Amirault Bourgueil Pavillon du Grand Clos is a micro-cuvée of Cabernet Franc from a single 0.21 hectare parcel, of which only around 1300 bottles are made.

The Pavillon is a tiny plot within the walled Grand Clos on the tuffeau slope of Bourgueil, planted to vines of around twenty-five years of age. At 0.21 hectares it yields only a barrel or two, about 1300 bottles in all. Everything is done by hand: organic farming, ploughing between the rows, hand harvesting and fermentation with the vineyard's own yeasts. The fruit is destemmed and macerated slowly before a long élevage in seasoned oak, with no new wood, so that the clay over limestone character of the parcel carries the wine rather than the barrel. Bottling is unfined, with minimal handling.

A concentrated, tightly wound Cabernet Franc built for the cellar; serve it with roast lamb, beef or aged cheese, decanted, at around 17 degrees.
